Cream cheese pancake bake4 c. of pancake mix

About 1 ½ c milk

Flour for rolling

1 package of cream cheese

2 Tbls. Lemon Juice

1c powder sugar

Pancake syrup

About 4 cups of pancake mix in a large bowl, add just enough milk to form a soft dough. Pour out onto floured surface, kneed just enough to form ball, divide into 3 pieces. Roll these pieces into rope like rolls, use a rolling pin to flatten just the surface of the ropes. Mix together 1 package of cream cheese, ½-1c of powder sugar, and 2tbls. of lemon juice. Spread mixture onto each of the flattened ropes. Twist the ropes slightly top with syrup and bake at 350 for about 20 min. Serve with syrup as you would pancakes.

Tip: put wax paper on your baking ban and spray it with non-stick spray.

Italian Sausage SpaghettiSauce

½ lb. of Sausage (we use fresh so it’s free to us)

3 T. of Italian seasoning (we buy ours from Dollar General store for $.50)

Mix these ingredients in a skillet (we like cast iron), and fry. Add in 1cup of shredded zucchini and 3-4 Cups of tomato sauce. Season with your favorite seasonings, like Italian seasoning, oregano, salt, pepper, chives, garlic powder. (we can’t afford the fresh stuff in the winter).

Boil around 3 lbs. of spaghetti noodles until soft, drain and add the sauce. This should feed about 10 people.

Tip: I took some old hotdog buns I found in the freezer (because I didn’t have any bread baked that day), open them up on a baking sheet, spread butter, sprinkle with garlic powder, Italian seasoning, and parmesan cheese. Bake until brown to eat with your spaghetti.

Chicken and Rice casserole

I took 3 pieces of boneless chicken breast, cooked it and then poured balsamic dressing on it and grilled it. I then cooked 4 cups of rice in 8 cups of water. I added 5 bullion cubes, parsley flakes, dash of crushed red peppers, and some salt to the rice. I cooked a bag of stir fry veg. (asparagus from frozen food section at wal-mart their brand), in water woshtishir (I don’t know the spelling) sauce, teriyaki sauce, and onions. I combined the rice, vegetables, and chicken in a big pan and served with strawberry lemonade.
