Hello world!

Hello, I want to start this blog off by telling you a little about my life and why I am doing this. My name is Crystal, I am a homemaker, I have two children and one husband that I love very much. I am the wife of a Deacon, (which means a lot of responsibilities), not only do I have to feed my family of 4 we have lots of company. I’m not talking about one or two people here or there, I am talking about, anywhere between 15-30 people at a time 3-4 days a week. I am disabled due to fibromiagia, degenerative disk, and arthritis. (sorry about the spelling) My husband has TOS in his right arm and problems with his right leg. I home school our children, Jessica 7 (ADHD, testing for learning disabilities right now, but pure heart.) and Brittany 10, (mature, responsible, way ahead in school and loves to argue and prove her point). I live on a budget small budget and have to feed many, as well as having to keep MSG’S and hormones away from my girls. We have a garden and chickens. We had a milk cow but had to sell her. We are looking forward to getting another cow and some more pigs. I wanted to start this blog to share recopies and money saving tips along to other mom’s. Although things are so busy we live the simple live, full of love, family, friends and most importantly God.

It is my plan that each time I update this blog, (hopefully everyday) I am going to add one new recipe or tip that I have learned. I will label them “for many” and “for a few”. There are certain food I fix only when it is the 4 of us because it is more expensive to fix.

Today’s recipe: “for many” those mornings after you have company spent the night over and need something quick and will go far.

Cream cheese pancake bake4 c. of pancake mix

About 1 ½ c milk

Flour for rolling

1 package of cream cheese

2 Tbls. Lemon Juice

1c powder sugar

Pancake syrup

About 4 cups of pancake mix in a large bowl, add just enough milk to form a soft dough. Pour out onto floured surface, kneed just enough to form ball, divide into 3 pieces. Roll these pieces into rope like rolls, use a rolling pin to flatten just the surface of the ropes. Mix together 1 package of cream cheese, ½-1c of powder sugar, and 2tbls. of lemon juice. Spread mixture onto each of the flattened ropes. Twist the ropes slightly top with syrup and bake at 350 for about 20 min. Serve with syrup as you would pancakes.

Tip: put wax paper on your baking ban and spray it with non-stick spray.
