International Night

4-H International Night helps kids expand their understanding of the world and other cultures. To prepare, the club must first select a country that they are interested in then research information about that country ~ its people, language, food, games, music, arts, natural resources, etc. Then the club creates a table top display that will teach others about their selected country, prepares a food typical of their country to serve during International Night, and prepares a short skit to present that highlights something unique about their country and it’s culture ~ a song, dance, play, or verbal presentation.

BRAZIL 2008!

Brazilian Black Bean Soup

Make this delicious soup that we served at our display booth!

Ingredients:

  • 2 - 1 lb, 13 oz cans of Goya black beans (do not drain) 
  • 1 T olive oil
  • 3 cups chopped onion
  • 1.5 teaspoons powdered garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons salt
  • 1 medium carrot, diced
  • 1 medium green pepper, diced
  • 1.5 cups orange juice
  • black pepper (to taste)
  • cayenne (red) pepper or red pepper flakes to taste
  • 2 medium tomatoes, diced 

Heat oil over medium heat in a skillet, saute onions, garlic powder, cumin, carrot, and salt until carrot and onions are just tender.

Add the green pepper and saute about 10 minutes more.

Add the canned beans.

Stir in orange juice, cayenne pepper and black pepper to taste, and the tomatoes.

Simmer for 30 minutes. Puree the soup if desired.

AUSTRALIA 2007!

Anzac Biscuits

You’ll love these delicious cookies from “the land down under!”

Combine: 1 cup of flour, 1 cup of dried coconut, 1 cup of brown sugar, and 1 cup of rolled oats in a mixing bowl.

In a sauce pan, blend together: 1/2 cup of melted butter and 2 T honey (or golden syrup).

Add 1 teaspoon of baking soda dissolved with 2 T boiling water to the butter & honey.

Add the liquid mixture into the dry mixture and stir well to make the dough.

Place spoonfulls of the biscuit (cookie) dough ~ about the size of a golf balls ~ onto a baking sheet. Give them some room to spread out!

Bake at 350 F for 15 to 20 minutes. Cool on a baking rack. Enjoy!

**NOTE** The American tablespoon is a little smaller than the British tablespoon, so be generous with your Honey and Water.

GUATEMALA 2006!

Guatemalan Corn Cake

This cake is moist and oh, so good! People kept coming back to our display table for seconds (and thirds)!

Ingredients:

  • 1 yellow cake mix
  • 1 package vanilla instant pudding mix
  • 4 eggs 
  • 1/2 cup vegetable oil
  • 1 (8.5 oz) can of cream-style corn (mashed and drained)
  • enough milk added to the corn to make 1 cup
  • 1 teaspoon vanilla extract
  • optional - powdered sugar

Directions:

Mix all ingredients on medium speed for 2 minutes. Pour into a greased and floured cake pan. Bake at 350 F for about 55 minutes, or until a toothpick inserted in the center, comes out clean. Cool 15 minutes and dust with powdered sugar if desired.
